Roasted Red Pepper Sauce

Ingredients
- 1 slice bacon
- 1/2 tablespoon olive oil
- 1 medium onion -- chopped.
- 2 cloves garlic -- minced
- 1 14 oz can diced tomatoes -- drained
- 1 large red bell pepper -- roasted and diced
- 1 cup red wine
- 2 tablespoons pesto -- (or 1/4 cup fresh chopped basil)
- 2 teaspoons sugar -- optional
- salt and pepper

Preparation
Step 1
Fry bacon in large skillet. Cool and crumble.
Add olive oil to the pan. Saute onion in olive oil and bacon grease
until translucent. Add garlic and cook one more minute.
Add drained tomatoes and wine. Bring to a boil and then simmer for 10
minutes.
Add red pepper and pesto. Add sugar, salt and pepper to taste.
Serve over grilled chicken or fish.
