  • 1 pound unpeeled, scrubbed red potatoes
  • 1 teaspoon salt
  • 3 tablespoons fat free half and half
  • 2 tablespoons light butter
  • 1/2 tablespoon prepared wasabi, or more to taste
  • salt and pepper to taste

Preparation

Step 1

Cut the potatoes into 1-inch pieces. Transfer them to a medium pot. Cover the potatoes with water and place the pot over high heat. Add 1 teaspoon of salt. Once the water boils, cover the pot with a lid and boil the potatoes about 15-20 minutes or until they are tender.
Just before the potatoes are cooked, combine the half and half, butter, and wasabi in a medium microwave-safe measuring cup or bowl. Microwave it on low heat for 1-2 minutes until the butter is melted.
Drain the potatoes and transfer them to a medium mixing bowl. Using a potato masher or large fork, smash them slightly. Pour in the half and half mixture and mix the potatoes with a wooden spoon until they are well combined, leaving some lumps. Season them to taste with salt, pepper and additional wasabi, if desired. Serve hot.
