Ingredients
- 4 oz grated sharp cheddar cheese
- 4 oz grated jack cheese
- 1/4 C chopped pimentos with juice
- 1 jalapeno pepper finely chopped
- 1/4 of a small yellow onion, grated
- 1 Tbl mayonnaise
- Kosher salt and white ground pepper

Step 1
Pulse the grated cheeses in a food processor until they are in very small pieces.
Transfer to a medium mixing bowl, add the pimentos, jalapeno and onion.
Mix in 1/2 of the mayo, mix well. Add remaining mayo as needed for the consistency you want.
Season with salt and pepper to taste.
Refrigerate over night for the best flavor. Serve with crackers.
Note:
To control the heat and keep the taste, remove the seeds and ribs from the jalapeno prior to mincing.
