Ingredients

  • 2 eggs
  • 3 Tbs. butter, melted
  • 3 Tbs. sugar
  • 3/4 tsp. salt
  • 2 c. milk
  • 1 1/2 Tbs. white vinegar
  • 1 c. flour
  • 3/4 c. yellow cornmeal
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 c. corn kernels
  • 1 c. heavy cream

Preparation

Step 1

Preheat oven to 350 degrees. Butter an 8" square baking dish. Put in oven and let it get hot.

Put the eggs in bowl and add melted butter. Beat until well blended. Add sugar, salt, milk, and venegar, and beat well. Sift into a bowl or stir together in a bowl the flour, cornmeal, baking powder, and baking soda, then add to the egg mixture. Mix just until batter is smooth and there are no lumps left. Stir in corn kernels.

Pour into heated dish, then pour cream into the center of the batter; don't stir. Bake for 50 minutes or until lightly browned.
