Ingredients

  • 6-8 chicken tighs
  • 1 16 oz. jar of your favorite salsa
  • 3 tbsps. of Homemade Seasoning Mix (recipe in Misc. Cookbook)
  • 1/2 cup sour cream (if desired)
  • 2 cups cooked brown rice

Preparation

Step 1

Spray the inside of your slow cooker with cooking spray. Place chicken thighs in bottom of cooker. Sprinkle the seasoning mix over chicken, then spread salsa over the top. Cook 6-8 hours on low. Remove thighs from cooker and stir sour cream into salsa mixture until sour cream warms and dissolves. Serve the chicken over rice, top with the sour cream/salsa sauce.
