ZUPPA TOSCANO - OLIVE GARDEN

Ingredients

  • 1 lb Italian sausage
  • 1/2 tsp red pepper flakes
  • 3 large russet potatoes, chucked
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 cups kale or Swiss Chard
  • 8 cups chicken broth
  • 1 1/2 cups heavy whipping cream

Preparation

Step 1

1. Sauté sausage and red pepper flakes in pot. Drain excess fat, set aside.
2. In same pan, sauté bacon. When about half-way cooked, add onions and garlic, sauté approx. 15" or until onions are soft.
3. Add chicken stock, bring to a boil
4. Add potatoes and cook until soft, about 15-20"
5. Add heavy cream and cooked sausage and cook until heated through.
6. Add white pepper to taste. Add kale just before serving
