Ingredients
- 1 c all purpose flour
- 1 t salt
- 1/4 t pepper
- 1/2 c buttermilk
- 4 boneless skinless chicken breasts (4 oz each)
- 1 c canola oil
- 1/2 c hot pepper sauce
- 1/4 c butter, melted
- 4 spinach tortillas (10 inches) or other flavor
- 1 c shredded lettuce
- 4 oz (1 c) shredded cheddar cheese
- 2/3 c chopped tomatoes
- 1/2 c blue cheese salad dressing

Step 1
In shallow bowl combine flour, salt & pepper. Place buttermilk in another shallow bowl. Dip chicken in buttermilk then roll in flour mixture.
In Lg skillet cook chicken in oil 4-5 min on each side until thermometer reads 170. Drain on paper towels; cut into strips.
In sm bowl combine hot pepper sauce & butter. Dip chicken strips into mixture coating both sides. Place chicken in center of each tortilla. Layer with lettuce, cheese & tomatoes; drizzle with salad dressing. Fold ends of tortilla over filling; secure with toothpicks if desired.
