Poblano Corn Chowder with Chicken and Chorizo 1 Picture

Ingredients

  • 4 cups Swanson Chicken Broth
  • 1 tablespoon sugar
  • 2 cans (about 14.5 ounces each) cream-style corn
  • 1 large potato, diced (about 2 cups)
  • 2 large poblano chile, seeded and diced (about 2 cups)
  • 1 package (10 ounces) frozen whole kernel corn, thawed
  • 1 pound skinless, boneless chicken breast and/or thighs, cut into cubes
  • 1/2 pound chorizo sausage, diced
  • 1 cup heavy cream
  • 1/4 cup chopped fresh cilantro leaves

Step 1

Stir the broth, sugar, canned corn, potato, chiles, thawed corn, chicken and sausage in a 6-quart slow cooker.

Cover and cook on LOW for 7 to 8 hours* or until the chicken is cooked through. Stir in the cream and cilantro. *Or on HIGH for 4 to 5 hours.


MY NOTES: Brown the sausage first and drain off the excess grease.

My friends and family really enjoyed the soup. Very easy and simple to construct. I would suggest rendering the chorizo, helps get rid of some of the fat. Will make it again.

I used browned and crumbled chorizo I had in my freezer. So I cooked the chicken breasts whole for a few hours and then removed and when cooled, I shredded. I also had some fresh cayenne peppers so chopped just a little to add some more heat. I also used evaporated milk rather than cream. Still was creamy but with less fat. Delish

I made this without the chorizo, just put extra chicken. And I didnt use as much corn as it called for, but more potato. It was so awesome! Everyone wanted seconds, even a guest. One person was upset that there were no leftovers! It doubles easily, and was really nice to come home to in the crock pot after work. Absolutely will make it again. As usual with these recipes, it needed more seasoning.

My family likes things spicy, so I added 1/2 tsp. cumin and 1/4 tsp. of cayenne pepper. I also cut down on the fat by slicing and pre-cooking the sausage somewhat and drained off the grease. I also use fat free 1/2 1/2 in almost all the recipes that call for cream. It still has a thick creaminess with out the fat and calories.

I do fry and drain the chorizo and use fat free half and half instead of heavy cream. It's still just as good, just not all the fat.

My husband and friend loved it! Delicious...lots of flavor!! The only complaint I have is that it's pretty greasy because of the chorizo...my hubby suggested rendering the chorizo down in a skillet before putting it in the Crock-Pot. I did add celery, the whole 16 oz bag of frozen corn, an extra cup of Chicken Broth, an extra cup of cream, and the full pound of chorizo because I didn't want to have any leftover ingredients. It worked out great...I also added garlic powder, black pepper, cumin, onion salt, and a little cayenne for seasoning. The chicken was extremely tender and flavorful after cooking for 7 hours...will definitely make again!!

Made this for the Bears game today. Everyone liked it. I might add a little more heat to it next time. I will definitely make it again!

This was delicious! This is my second time making it and it was just as good as I remember. Yes, it is high fat but so worth it! I suppose I could make it with half and half next time (either 1/2 cup cream, 1/2 cup half and half or 1 cup half and half).

This is amazing. I make it for company all the time and they think I'm awesome (when I'm actually not a good cook at all). My husband loves it. Definitely a winner. :)

OH this is a decadant high fat treat! I took it to a recipe share pot luck. everyone voted it GREAT until they flipped the card over and read the nutritional information. It flunked the test. :(I need a much lighter version that still has the creamy base, MORE chili flavor and perhaps less meat? Help me out and revamp this one into a low-fat/carb - high fiber/protien soup. I know it's possible :)

I made and served this soup for a Christmas dinner party. The soup had a fantastic flavor.The time involved is worth the results. My friends loved the soup and went back for seconds. I will be serving it again at this years Christmas party.

This turned out great. I would've liked to have had a little more kick but traditionally cooking with a slow cooker mellows all food...unless you add crushed red pepper. I did roast (broil) the corn and poblano which may have added a little punch here and there where the poblano was crispy. Other than that, I didn't change anything else.
