Ingredients

  • For The Cake:
  • 3 cups King Arthur flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 eggs, lightly beaten
  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 1 pound carrots, pared and finely shredded
  • 1 can (8oz.)crushed pineapple, drained
  • For The Orange Frosting:
  • 6 ounces cream cheese
  • 3 1/2 cups confectioner's sugar
  • 1 teaspoon grated orange peel
  • 1-2 Tablespoons orange juice

Preparation

Step 1

Preheat the oven to 350 degrees.

To Make The Cake:

In a small bowl, stir together the flour, baking powder, baking soda, cinnamon and salt. Set aside.

In a large mixing bowl, blend the eggs, oil and sugar. Stir in the shredded carrots. Gradually add the flour mixture, mixing just until combined. Stir in the pineapple.

Pour the batter innto a 9 X 13 inch pan. Bake at 350 degrees for 45 minutes. or until a cake tester, inserted in the center of the cake, comes out clean. Cool on a wire rack.

To Make The Frosting:

place all frosting ingredients in a mixing bowl. Beat until creamy. Frost the cake when cool.
