Ingredients
- 1/2 lb sliced bacon, chopped
- 1/2 c chopped onion
- 1/2 c chopped green pepper
- 12 eggs, lightly beaten
- 1 c 2% milk
- 1 t salt
- 1/2 t pepper
- 1/4 t dill weed
- 16 oz pkg frozen shredded hash brown potatoes, thawed
- 4 oz shredded cheddar cheese (1 c)

Preparation
Step 1
In Lg skillet cook bacon over med heat until crisp. Remove with slotted spoon; drain on paper towels. Discard drippings, reserving 2 T. In same skillet saute onion & green pepper in drippings until tender; remove with slotted spoon.
In Lg bowl whisk eggs, milk, & seasonings. Stir in hash browns, cheese, onion mixture & bacon.
Transfer to greased 13x9 baking dish. Bake uncovered at 350 35-40 min until knife inserted near center comes out clean.
