    lb sliced bacon, chopped

    c chopped onion

  • ½

    c chopped green pepper

    eggs, lightly beaten

    c 2% milk

  • 1

    t salt

  • ½

    t pepper

  • ¼

    t dill weed

  • 16 oz pkg frozen shredded hash brown potatoes, thawed

  • 4

    oz shredded cheddar cheese (1 c)


In Lg skillet cook bacon over med heat until crisp. Remove with slotted spoon; drain on paper towels. Discard drippings, reserving 2 T. In same skillet saute onion & green pepper in drippings until tender; remove with slotted spoon. In Lg bowl whisk eggs, milk, & seasonings. Stir in hash browns, cheese, onion mixture & bacon. Transfer to greased 13x9 baking dish. Bake uncovered at 350 35-40 min until knife inserted near center comes out clean.
