Barbecued Bluefish (or any fish) with Grilled vegetables

Ingredients
- 1/2 cup shredded fresh basil
- 1/4 cup fresh lemon juice
- 1 tbspn + 1 tspn olive oil
- 1 tbspn minced garlic
- 1 tbspn honey
- salt and pepper to taste
- 2 cups unpeeled eggplant slices,1/4"thick
- 1 med. red bell pepper,cored,seeded and cut into 6 pieces
- 1 med. green bell pepper,cored, seeded and cut into 6 pieces
- 1 med. yellow bell pepper, etc.
- 2 med. zucchini, cut into 1/8" lengthwise slices
- 4-5 oz fish fillets

Step 1
To prepare marinade, in gallon-size sealable plastic bag, combine basil, juice, oil, garlic, honey, salt and pepper;add eggplant,bell peppers, and zucchini. Seal bag, squeezing out air,turn to coat veggies. Refrigerate at least 2 hrs.
Spray grill rack with nonstick cooking spray.
Drain marinade into small saucepan; bring to a boil and simmer 3 mins. Place fish and veg on grill, brush with reserved marinade.
Grill fish and veg., turning once and brushing with any remaining marinade, 12-15 mins., until fish flakes when tested and veggies are tender-crisp.
