Ingredients
- Oat Bar:
- 2 - 6 ” Heart-shaped baking pans
- Coconut oil
- 1 1/2 cup rolled oats
- 1 cup whole wheat or rice flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/4 cup stevia in the raw
- 1 chia egg (1 tbsp. chia seeds + 4 tbsps. warm water)
- 1/2 cup Earth Balance (melted) or organic butter
- 1/4 cup pure maple syrup
- 2 tablespoon almond milk
- 1 tablespoon shredded coconut or sesame seeds
- STRAWBERRY SPREAD:
- 2 cups chopped strawberries
- 4 tablespoon sugar in the raw
- 1 tablespoon chia seeds

Preparation
Step 1
Preheat oven to 350F
Line baking pans (2- 6 inch heart shaped or 1 9x9 square pan) with parchment paper
Oil the sides of the pan
STRAWBERRY SPREAD:
In medium pot combine strawberries and sugar
Heat over low heat until strawberries become watery. Add chia seed and stir well.
Bring to boil then simmer over low heat for 10 minutes, letting it thicken.
Remove from heat, set aside to cool.
OAT BAR:
In a small bowl prepare chia egg
In large bowl mix oats, flour, stevia, baking soda and salt. Set ½ cup mixture aside.
Add earth balance, syrup, milk, to chia egg. Whisk well.
Combine wet and dry ingredients and mix well.
Pour the mixture in the baking pan(s) and press down with balls of fingers, smoothing out.
Spread medium layer of strawberry mixture and smooth out.
Sprinkle on the reserved ½ cup oat mixture.
Sprinkle on coconut or sesame seeds.
Bake for approximately 30 minutes.
Cool for 30 minutes and remove from pan.
Slice and refrigerate.
