Pork Teriyaki Stir Fry

Ingredients
- 1 c. Island Soyaki (Trader Joe's)
- 2 tsp fresh ginger, grated
- 1 T cornstarch
- 1/2 tso red pepper flakes
- 1 tsp sesame oil
- 1 lb pork tenderloin
- 1 red pepper, cut into strips
- 1-2 c. snap peas
- 1 broccoil crown, cut up
- 1 c. shitake mushrooms (or any type)
- 4 green onions, chpd
- 1 8 oz can bamboo shoots
- noodles or rice

Step 1
Whisk together soy sauce, ginger, cornstarch and red pepper. Cut chops into strips or chunks and add to soy sauce. Marinate in the refrigerator for at least 15 minutes.
Heat 1/2 tsp sesame oil in large pan over high heat. Remove pork from marinade and add to skillet. Stir fry 1-2 minutes or until just done. Remove from skillet and keep warm.
Add remaining sesame oil and add broccoli, cover and cook for a couple minutes until just starting to get tender. Add peppers, peas, mushrooms and onions and stir fry 2-3 minutes. Stir in the reserved marinade and bamboo shoots and bring to a boil. Cook 1 minute until sauce thickens. Pour over pork and serve with think whole wheat noodles or rice.
