Spicy Black Bean Soup and Tortillas

Ingredients

  • 1 1/2 cups dried black beans
  • 1 cup chopped yellow onion
  • 1/2 lb chopped red potatoes
  • 1 cup salsa
  • 2 cloves minced garlic
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper
  • 6 Tbsp shredded four cheese blend
  • 6 Tbsp low fat plain yogurt (optional)
  • 6 Tbsp chopped cilantro

Preparation

Step 1

Rinse the beans and soak overnight. In the morning, put the beans in a slow cooker with 5 cups water, onion, potatoes, salsa,and garlic. Cover and cook on low 8 hours. Season with salt and pepper. Serve with cheese, yogurt, and cilantro.
