Janice Mauldin Castleman First time I ever ate sesame fried chilcken was at Norma's Cafe on Davis St. I don't know her recipe, but this simple, down-home one I use seems close enough:

Ingredients

  • 1 cup all-purpose flour
  • 3 tablespoons sesame seeds
  • 1/2 teaspoon paprika
  • salt and pepper
  • 6 boneless skinless chicken breast halves, cut in strips
  • 1/2 cup buttermilk
  • 1 egg
  • Oil for deep-fat frying

Step 1

Heat the oil in a large frying pan. Place the first 4 ingredients in a ziplock bag, combining all. Beat the egg and add the buttermilk. Dip the breasts in the milk/egg mixture, then drop into the plastic bag, shaking to coat. Take the breasts out and repeat the dipping and flour coating one more time.

Place the breasts in the hot oil and cook about 8 minutes on each side. Drain on paper towels.
