Ingredients

  • 1 tbsp butter
  • 90 g diced pancetta
  • 1/3 cup white wine
  • 12 oz cooked spaghetti
  • 1 cup whipping cream
  • 2 large eggs
  • 1 cup grated parmesan cheese
  • 1 tsp corn starch
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup chopped fresh parsley

Step 1

Bring a large pot of salted water to a boil.

Heat butter in a wide saucepan. Cook 7 minutes till crisp. Remove pancetta and all but 1 tbsp of oil. Add wine and boil till almost evaporated.

In a bowl mix cream, eggs, parmesan, corn starch, salt and apper. Drain pasta and add to the pan with the oil and pancetta. Increase heat to medium. Add cream mixture and cook 2-3 minutes till thickened and pasta is coated. Stir in parsley. Serve immediately.
