Ingredients

  • 4 skinless chicken breasts, deboned
  • Salt and pepper
  • 1/2-1 c. flour
  • 6 Tbs. butter
  • 2 Tbs. olive oil
  • 3 garlic cloves, minced
  • 1-1 1/2 lbs. mushrooms, thinly sliced
  • 4 tsp. lemon juice
  • 3/4 c. dry white wine

Preparation

Step 1

Pound chicken breasts until 1/4" thick. Dredge in flour mixed with salt and pepper. Shake off excess. Melt butter in olive oil over medium heat. Saute garlic.

Add chicken and saute until browned. Remove chicken and keep warm. Saute mushrooms; return chicken to pan. Add lemon juice and wine and stir. Cover and simmer until cooked, approximately 15 minutes. Place chicken on a platter and pour mushroom sauce over.
