- 10 large, firm bell peppers, roasted and peeled
- 2 tsp. dry mustard
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 Tbs. minced garlic
- 3 Tbs. wine vinegar
- 1/2 c. olive oil

Dressing:
Place the dry mustard, salt, pepper, and garlic in a bowl. Add the wine vinegar. Whisk to mix.
Add the olive oil in a slow, steady stream, whisking constantly, until dressing is thick.
Toss the peppers in the dressing.
