Ingredients
- 3 English Muffins split
- 2 Tablespoons butter or margarine
- 1 lb. bulk pork saussage
- 1 4 oz. can chopped green chilies
- 1 small jar pimentos
- 1 small onion cooked with the saussage
- 3 cups (12 oz.) shredded cheddar cheese
- 1 1/2 cups commercial sour cream
- 12 eggs beaten

Preparation
Step 1
Spread cut side of each muffin with 1 teaspoon butter
Place buttered side down in lightly greased 13 x 9 x 2 baking dish.
Cook saussage with onion in skillet until brown stirring to crumble. Drain
grease from saussage.
Layer half each of saussage, chilies,pimento, and cheese over muffins.
Combine sour cream and eggs; pour over casserole.
Repeat layers with remaining saussage, chilies,pimentos, and cheese over the top.
Refrigerate 8 hours or overnight.
Remove from fridge and let stand at room temperture 30 minutes.
Bake uncovered 350 degrees 35 to 50 minutes
Yield 8-10 servings
