  • 2 1/4 cups diced plum tomato
  • 1/3 cup capers
  • 1/4 cup chopped red onions
  • 1/4 cup parsley
  • 2 tablespoons cider vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon salt
  • 2 ounces Monterey jack cheese, cubed
  • 16 ounces navy beans
  • 1 ounce salami, chopped
  • 1 clove garlic, minced

Step 1

1. Cook pasta according to package directions, omitting salt and fat. Drain

2. Combine tomato and remaining ingredients in a large bowl. Add pasta to tomato mixture, tossing well to combine.
