Step 1
Bake with the skins on till tender, then grate while hot. This will keep it from getting heavy. Once shredded make a well, add 1 egg beaten, a little nutmeg, salt and pepper. roll into little thin logs and cut. Boil them in salted boiling water. They are done when they float to the top.
take them out and put them immediately into the sauce.
Typical sauce onion garlic, basil, little fresh tomato ( if want) chicken broth, a little port wine, grilled shallots. If you want spice add a little cherry tomato etc
