Mini Cherry Cheesecake Bites

A fun twist on an old favorite and the best part is that the crust is made from refrigerated cookie dough!

Ingredients
- 2 -(16.5 ounce) packages refrigerated sugar cookie dough
- 1 -(8 ounce) package cream cheese
- 1 - (14 ounce) can sweetened condensed milk
- 1/3 cup lemon juice
- 1 tsp. vanilla
- 1 -(21 ounce) can cherry pie filling

Step 1
For the crust: Preheat oven according to package directions. Grease a mini muffin pan lightly with cooking spray. Add 1 rounded tbsp. of dough to each muffin tin. Bake 7-9 minutes. Cool completely. Center should sink immediately, if not, gently press center to create a cavity. Let cool. (You will need to make 24 cookie cups.)
For the Filling: Soften cream cheese. In mixing bowl, whip cream cheese until fluffy. Gradually add the sweetened condensed milk, beat until smooth. Add lemon juice and vanilla. Stir until thick. Pipe the filling into the cooled cookie cups with a piping bag. Top with the cherry pie filling. Keep refrigerated.
Serves 24
Notes
Can use other kinds of pie filling for the topping, or you could use fresh berries.
