Ingredients
- 3/4 cups chopped pecans
- 1/4 cup + 2 Tbsp. packed brown sugar
- 2 Tbsp. Cajun seasoning
- 1 tea. thyme
- 1 tea salt
- 7 lb. crown roast of pork (16 chops)
- 1/2 cup light corn syrup
- 1/4 cup bourbon or orange juice
- 3 pkgs. (6.09 oz. each) rice pilaf mix
- 6 Tbsp. chopped fresh cilantro

Step 1
Preheat oven 375 degrees.
Spread pecans on baking sheet and bake until browned (3-4 min.). Cool.
Combine 2 Tbsp. brown sugar, cajun seasoning, thyme and salt; rub over pork. Place on rack in roasting pan. Roast until meat thermometer reads 160 degrees. (2-2 1/2 hrs.)
Meanwhile, in pot over medium high heat bring corn suryp, bourbon and remaining brown sugar to boil; cook until reduced to 1/2 cup (15 mins.). Brush over pork twice during last 30 minutes of cooking time.
Cook pilaf mixes together according to package directions; stir in cilantro and pecans.
Fill center of roast with some of the rice. Serve with the remaining rice.
