Ingredients

  • 1/2 cup cranberries, fresh or frozen
  • 2 cups King Arthur flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup dried cranberries
  • 3/4 cup plain yogurt
  • 4 tablespoons, (1/2 stick) butter, melted
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup unsalted pistachios, chopped
  • 1/2 teaspoon salt

Preparation

Step 1

Preheat oven to 400 degrees.

Coarsley chop fresh cranberries in a food processor. Set aside.

In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt. Stir until well blended. Stir fresh and dried cranberries into dry ingredients.

In a separate bowl, whisk together the yogurt, melted butter, milk and egg until smooth. Add to dry ingredients all at once and fold just until evenly moistened. Do not overmix.

Pour batter into greased muffin cups. Sprinkle pistachios on tops.

Bake in 400 degree oven until tops are golden and a toothpick inserted in centers comes out clean, about 20-22 minutes.

Cool on wire rack before removing muffins from the pan.
