Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 cups King Arthur flour
  • 2 large eggs, lightly beaten
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 1/2 cups fresh blueberries, or one 12 ounce bag of frozen blueberries
  • 1/2 cup milk
  • 2 teaspoons sugar (for the tops)

Preparation

Step 1

Preheat oven to 375 degrees.

Cream together the butter and sugar. Add the eggs and mix well.

Sift dry ingredients together and add alternately with the milk to the mix.

Mash 1/2 cup of the blueberries and stir in to the mixture. Add the rest of the whole berries and gently stir into the mixture.

Fill well greased or paper lined muffin cups 2/3 full and sprinkle sugar sugar on top of each muffin.

Bake at 375 degrees for 25-30 minutes.

Makes at least a dozen muffins.
