- Salt, as required
- Paprika, as required
- Sunflower seed oil, as required

Step 1
1. Place the lemon slices in a single layer into a colander. Sprinkle generously with salt and leave to drain for at least 24 hours, until the fruit is soft and limp.
2. Place the slices in layers in a sterile, dry jar and sprinkle each layer with a little paprika. Cover with sunflower seed oil.
3. Cover with tight fitting lid and allow to sit for at least 3 weeks.
