Vegetarian Black Bean Burgers

Ingredients

  • 1 can (15 oz) black beans; drained, rinsed, & mashed
  • 1/4 C. onion, finely chopped
  • 1/3 C. corn
  • 1/4 C. thick & chunky salsa
  • 1 garlic clove, pressed
  • 2 T. snipped fresh cilantro
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 C. dry bread crumbs
  • 2 egg whites, lightly beaten

Preparation

Step 1

1. Mash beans. Add onion, corn, salsa, garlic, cilantro, salt, & pepper. Mix well. Add bread crumbs and egg whites; mix well. Form mixture into four round patties.

2. Heat skillet over medium heat until hot. Lightly spray pan with nonstick spray; cook patties 6-8 min. or until lightly browned, turining once.

3. Place burgers on whole wheat hamburger buns. Top with sour cream, salsa, and lettuce.
