CHICKEN SATAY WITH SPICY PEANUT SAUCE

Ingredients
- 4 boneless, skinless chicken breast halves
- 1 C coconut milk
- 3 garlic cloves
- 1 TBL curry powder
- 1 tsp grd. coriander
- 1 tsp paprika
- 1 tsp salt

Preparation
Step 1
remove small pieces of meat (chicken tender loins) from underside of each breast half & place in med bowl
cut each breast half into 3 long strips, abt 1-1/2" wide & add to bowl
pour coconut milk into separate bowl & press garlic cloves into milk
stir curry, coriander, paprika & salt into coconut milk & pour over chicken
let chicken marinate in refrig. for at least 2 hours
while chicken is marinating prepare cucumber salad & peanut sauce (see recipes)
if using bamboo skewers (you'll need about 16)for chicken, soak them in water
prepare grill or preheat broiler
thread each chicken piece onto a bamboo or metal skewer
grill or broil chicken for a few min on each side or until lightly browned & cooked through
divide cucumber salad (see recipe) & peanut sauce (see recipe) into 4 sm bowls each
serve each person 4 chicken skewers, a bowl of cucumber salad & a bowl of peanut sauce
