  • 1 1/2 cup yellow cornmeal
  • 1/2 cup flour
  • 1 tsp. salt
  • 1/2 tsp. sugar
  • 2 tbsp. baking powder
  • 1 tsp. baking soda
  • dash of cayenne
  • dash of black pepper

Step 1

Sift together. Then add...
2 eggs beaten and combined with buttermilk to equal 1 1/4 cups
2 tbsp. bacon fat
1/2 cup chopped scallion

Combine with a spatula until just mixed. Keep the oil at a steady 365 degrees.
Drop by tablespoons into oil. Hushpuppies sink, then rise and turn over by themselves. Remove them with a slotted spoon and drain on paper towels.
Hushpuppies can be held in the oven but should be served as soon as possible. For extra flavor, sprinkle with a mixture of salt, pepper and cayenne, or your favorite Cajun spice.
