Ingredients

  • 10 ounces Maraschino cherries
  • 1/3 cup butter, softened
  • 2/3 cup brown sugar, firmly packed
  • 2 eggs, lightly beaten
  • 1 3/4 cups King Arthur flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2-3 bananas, very ripe, mashed
  • 1/2 cup ,chopped walnuts

Preparation

Step 1

Preheat the oven to 350 degrees.

Grease and flour a 9 X 5 inch baking pan.

Drain maraschino cherries, reserving 2 tablespoons of the juice. Coarsely chop cherries. Set aside.

Place butter, brown sugar, eggs and reserved cherry juice in a large mixing bowl. Mix on medium speed for 3 to 4 minutes or until well mixed.

Combine flour, baking powder and salt. Add to butter mixture alternately with mashed bananas, beginning and ending with the flour. Stir in the cherries and the nuts. Pour batter into greased and floured baking pan.

Bake in 350 degree oven for 50-55 minutes or until a cake tester, inserted into the center of the loaf, comes out clean.

Cool on a wire rack.
