Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar, lightly packed
- 1 teaspoon lemon zest, finely minced
- 1 teaspoon orange zest, finely minced
- 1 teaspoon lime zest, finely minced
- 2 teaspoons vanilla
- 4 eggs, lightly beaten
- 1 cup sour milk or buttermilk
- 4-5 bananas, very ripe, mashed
- 4 cups King Arthur flour
- 2 teaspoons baking soda
- 1 pinch salt
- 1/4 teaspoon nutmeg
- 2 cups chopped walnuts

Preparation
Step 1
Preheat the oven to 350 degrees.
Lightly grease and flour three 9 X 5 loaf pans.
Cream the butter until softened. Blend in the white and brown sugars as well as the three minced zests and vanilla and mix well until smooth and creamy. Mix in the eggs and scrape down the sides of the bowl often to blend. Stir in the sour cream (or buttermilk) and mashed banana.
In a separate bowl, mix together the dry ingredients. Fold into the batter and blend slowly. Fold in the walnuts. Pour batter into loaf pans, making each pan about two thirds full.
Bake in a 350 degree oven for 50-55 minutes or until a cake tester, inserted into the center of the loaf,comes out clean.
Cool on a wire rack, about 20 minutes. Remove loaves from pans and cool to room temperature before slicing.
