Ingredients

  • 2 cups Sugar
  • 1 3/4 cup All Purpose Flour
  • 3/4 cup Coca
  • 1 2/3 teas Baking Soda
  • 1 1/2 teas Baking Powder
  • 1 teas Salt
  • 2 Eggs
  • 1 cup Milk
  • 1/2 cup Vegetable Oil
  • 2 teas Vanilla
  • 1 cup boiling Water
  • 1 (21 oz) can Cherry Pie Filling
  • 1 4 oz) container Whipped Topping

Step 1

Preheat oven to 350 degrees. grease and flour two 9 inch baking pans. In a large mixing bowl, combine dry ingredients. Add eggs, milk, oil and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour into prepared pans. Bake 30 - 35 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes, remove from pans. Cool completely.
Place one layer on serving plate. Spread half of the pie filling over layer to within 1/2 inch of edge. Spoon or pipe border of whipped topping around edge. Top with second cake layer. Spread remaining pie filling to within 1/2 inch of edge. Make a border around top edge with remaining topping. Chill.

NOTES:
This cake ran over in teh oven, so you might want to put some liner in the oven in case. Put all ingredients together and it seeded to turn out all right.
