Ingredients
- 1 C. mayonnaise
- 2 tsp. fresh lime juice
- 3 C. cooked, diced chicken
- 1/2 C. chopped pecans
- 1/2 C. dried cranberries
- 1/2 C. minced celery
- 1 Red Delicious apple, cored, seeded, diced
- Salt and pepper to taste
- 3 large endive, separated into leaves

Step 1
Combine mayonnaise and lime juice. Add chicken, pecans, cranberries, celery and apple. Season with salt and pepper. To serve, spoon salad into endive leaves.
