Baked Potato Soup

Ingredients

  • 4 lg. baking potatoes (2 3/4 lb)
  • 2/3 C. butter
  • 1/2 C. flour
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 6 C. milk
  • 8 oz. sour cream
  • 1/4 C. green onions, thinly sliced
  • 10 bacon strips, cooked and crumbled
  • 4 oz. shredded cheddar cheese (1 C)

Preparation

Step 1

1. Bake potatoes at 350 degrees until tender (65-75 min). Cool completely. Peel and cube potatoes.

2. In large saucepan melt butter; stir in flour, salt, and pepper until smooth. Gradually add milk.

3. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat.

4. Whisk in sour cream. Add potatoes and green onions. Slightly mash potatoes if desired. Garnish with bacon and cheese.
