Ingredients
- 3 cups King Arthur flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3 tablespoons butter
- 3 eggs, lightly beaten
- 1 tablespoon lemon rind, grated
- 1/4 teaspoon mace
- 1/2 teaspoon lemon extract
- 1/2 teaspoon vanilla
- 1 cup milk
- 1 cup moist raisins

Preparation
Step 1
Preheat oven to 350 degrees.
Grease and flour a 9 X 5 inch loaf pan.
Cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Stir in raisins and lemon rind.
Combine lemon extract, vanilla and milk.
Alternating with the milk mixture, add the dry ingredients to the raisin mixture. Pour into greased and floured baking pan and bake for 45-50 minutes, or until a cake tester inserted into center, comes out clean.
Cool on wire rack for about 10 minutes before removing loaf from the pan.
Allow bread to cool completely before slicing.
