Ingredients
- 1 tbsp. butter, plus 2 more tbsp. butter
- 1 cup sliced mushrooms
- 2 shallots, minced
- 1 lb. spinach, trimmed and washed
- salt and pepper
- 2 tbsp. flour
- 1 cup milk
- juice of 1/2 lemon
- 4 fish fillets (5-8 oz. each)
- 4 tbsp. breadcrumbs seasoned with salt and pepper and sweet paprika --- or 1/4 cup crumbled cooked bacon

Step 1
Sauté the mushrooms and shallots in one tablespoon of the butter until tender and brown.
Add the spinach and continue to cook until it just starts to wilt. Season with salt and pepper and set aside to cool.
In a separate saucepan, melt the remaining 2 tbsp. of butter. Whisk in the flour and cook, whisking until combined. Add the milk; whisk to combine again and cook until the sauce is slightly thickened. Add the lemon juice and check for final seasoning.
Layer the spinach mixture in a buttered casserole. Place the fillets on top. Lightly season with salt and pepper. Pour the sauce over the fish and sprinkle on the breadcrumbs or the bacon. Bake at 350 degrees for 30 minutes.
