Ingredients
- DRESSING:
- 1 TBL madras curry powder
- 1 TBL olive oil
- 1 1/2 C mayo
- 1 C mango chutney
- 1 tsp cayenne pepper
- 1 tsp salt
- SALAD:
- 2 green apples (cored, peeled & diced
- into 1/2" squares)
- 3 cooked chicken breasts (skins removed
- & diced
- 1/4 C currants
- 1 green onion (chopped including some
- of the greens)
- 2 oz toasted slivered almonds

Preparation
Step 1
SALAD DRESSING:
heat olive oil in saute pan
add curry powder & cook at a low temp
for 2 min
remove from heat & let cool
in lg. bowl,combine ingredients
& add curry mixture
you may need to dice up mango pieces in
the chutney if they are too large
SALAD:
combine all ingredients in mixing bowl
and add 1/2 of the dressing
leave a little of green onions & toasted almonds for garnishing on top
add remaining dressing as needed
