  • 100 g butter, softened, plus extra for greasing
  • 2 ripe bananas
  • 100 g light muscovado sugar
  • 100 g self-raising flour
  • 2 tsp ground cinnamon
  • 2 eggs
  • 2 tbsp milk
  • icing sugar, toffee sauce and ice cream, to serve, if you like

Put the butter in a 1-litre baking dish
and microwave on High for 30 secs-1 min
until melted. Add 1½ bananas, mash into
the melted butter, then add the sugar,
flour, cinnamon, eggs and milk. Mix
together well.

So chuffed I found this recipe- so so much quicker than making banana bread to use up old bananas! I used two whole bananas in the mix and a third banana sliced on top. I put a tsp vanilla extract and mixed spice instead of just cinnamon- delicious! Next time will try adding choc chips and/or cocoa.

I made this tonight and I can't believe how simple and yummy it is! It was so quick to make and tasted lovely. I think it's provably a little too sweet for me so I'll try it with a little less sugar next time. Highly recommend it!

Wow this really surprised me. Didn't expect it to turn out so lovely. Very impressed! We had ours with custard everyone loved it, would defiantly make again. Couldn't of been easier

This has to have 5 stars just for the ease of making and the fact that it comes out perfectly. Ok, so its not the most strong of flavours, and certainly needed the toffee sauce to make it more flavoursome, but it is a lovely moist well risen sponge-type pudding. I made this for the first time today and it took about 11 minutes from starting preparation to being ready to eat! I will say that it does clearly need to be large bananas and very ripe ones at that (mine were too small and not ripe enough) to make enough flavour.
