Jumbo Shells with Spinach and Walnuts

Ingredients
- 12 jumbo pasta shells, uncooked
- 1 package frozen chopped spinach, thawed (reserve liquid)
- 1/2 cup toasted wheat germ
- 1/2 cup finely shredded Parmesan cheese
- 2 green onions, thinly sliced
- 1/2 cup finely chopped walnuts, toasted and divided
- 1/4 tsp. nutmeg
- 1/3 cup water
- 1 jar Alfredo sauce

Preparation
Step 1
Heat oven to 350 degrees. Lightly spray 8" baking dish with cooking spray. Cook shells according to package - drain and cool.
In large bowl, combine spinach, reserved liquid, wheat germ, cheese, onions, 1/4 cup walnuts, nutmeg and water. Spread 1/2 cup sauce in bottom of pan. Spoon spinach mixture into cooled shells, dividing equally. Arrange in baking dish; pour remaining sauce over shells. Cover and bake 30 to 35 minutes or until sauce is bubbly and shells are heated through.
Remove from oven; sprinkle with remaining walnuts.
