BAKED BRIE AND APRICOTS

- 1 pound brie cheese
- 2 sheets frozen puff pastry, thawed according to package directions
- 1 c apricot jam
- 1/3 c chopped walnuts
- Egg wash: 1 egg yolk beaten with 1 t water

Line baking sheet with parchment paper. Remove the outside rind from the brie and cut cheese into 16 same-size pieces. Set aside.
Place puff pastry sheets on a lightly floured work surface. With sharp knife, cut each sheet into eight 3-inch squares. Place a piece of brie, 1 T jam and 1 t chopped walnuts in center of each square. Brush edges of each square with egg wash, fold into a triangle and press to seal edges. Place on prepared baking sheet and refrigerate until ready to bake. Refrigerate remaining egg wash.
Preheat oven to 425 degrees. Brush tops of pastry with remaining egg wash and bake in middle of preheated oven until golden brown, about 10 to 12 minutes. Arrange on tray and serve at once.
