Ingredients
- 1 15-oz can black beans, drained and rinsed
- 1 15-oz can kidney beans, drained and rinsed
- 1 15-oz can fire-roasted diced tomatoes or 1 1/2 cups diced fresh tomatoes
- 1 6-oz can tomato paste
- 1 large sweet potato, diced
- 1 cup dry quinoa
- 1 onion, diced
- 5 to 6 cloves garlic, minced
- 1 tbsp olive oil
- 1 1/2 tbsp chili powder
