01/02/15 - I had this for lunch and it was very good but it was huge and I wound up eating only about 2/3 of it. I was tired though, so give it another try before you reduce the quantities.

QUINOA****Quinoa and Tuna Lunch Bowl 1 Picture

Ingredients

  • 1/2 cup cooked quinoa
  • 2 tablespoons minced red onion or shallot
  • 1/4 cup oven dried cherry tomatoes
  • 2 tablespoons fresh basil chiffonade
  • 1/2 tablespoon lemon juice
  • 1 tablespoon olive oil (or to taste - it needed more)
  • 1 cup arugula spinach blend (or just arugula)
  • I small can Italian tuna, drained

Preparation

Step 1

Combine olive oil and lemon juice, salt and pepper and mix. Add any dried flavourings here if desired. (Alternately, you could easily go with a prepared vinaigrette - basic red wine, preserved lemon, etc.)

Add in tomatoes, onion and basil and toss to combine. Add quinoa and toss again then add arugula/spinach blend, mix well and plate.

Top with the drained can of tuna, extra freshly ground pepper and Maldon salt.
