Ingredients
- 2 tbsp. fresh lemon juice
- 1 tbsp. Dijon mustard
- 1 tsp. salt
- 1/2 tsp. white pepper
- 1 egg
- few drops of Tabasco sauce
- few drops of Worcestershire sauce
- 1/2 cup olive oil
- 2 tbsp. mixed chopped herbs: parsley, tarragon, chives

Step 1
Put all ingredients except the oils in the bowl of a food processor fitted with the metal blade. Process. Then, with motor running, pour in the oil in a slow. steady stream. Thin the mayo with a few drops of warm water if it gets too thick. Stir in the herbs; add salt, pepper and lemon to taste.
