- 1/2 cup brown rice flour
- 1/2 cup potato starch
- 1/4 cup sorghum flour
- 1/4 cup tapioca flour
- 1 teaspoon xanthan gum

Preparation
Step 1
Makes 2 1/4 cups flour
Using dry measuring cups (1/4 cup and 1/2 cup), scoop the flour and starches from their containers. (If spooning them from narrow bags, it will make about 2 cups.) Add the gum and whisk to combine. Store in an air-tight container if not using immediately. During summer months or in warm climates, store in the freezer or at least the refrigerator for longer storage. Spoon flour mix into dry measuring cups when measuring for a recipe.
