This was excellent for both. D loved it too and remarked that it was just the perfect amount and had a nice lemony flavour (Don't leave out the lemon rind) I used one haddock loin from Costco for both of us and it was just right.

Ingredients

  • 2 servings
  • 1 haddock loin (or halibut or cod)
  • 2 tbsp. Hellmann's with olive oil
  • 4 finely chopped black olives
  • 1 tsp. grated lemon rind
  • 1/2 tbsp. lemon juice
  • 1/2 tsp. chopped fresh thyme or pinch of dried
  • 1 pinch each of pepper and maldon salt

Preparation

Step 1

Preheat oven to 450 degrees F.

Place fillets on greased or parchment lined rimmed baking sheet.

Stir mayonnaise with remaining ingredients; spread over fish.

Roast for calculated time: 10 minutes per inch or when fish flakes easily with tested with fork.
