Banana Nut Bread

This makes a moist bread that can frozen. You might want to cut bread before freezing.

Ingredients
- 1/2 cup cooking oil
- 1 cup sugar
- 2 large eggs, lightly beaten
- 3 large bananas, very ripe, mashed
- 2 cups King Arthur flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tabblespoons milk
- 1/2 teaspoon vanila
- 1/2 cup chopped walnuts (can be increased to 1 cup if you wish to stay in the will)

Preparation
Step 1
Preheat the oven to 350 degrees
Grease and flour loaf pan (9X5X3 inches)
Beat the oil and sugar together until it is smooth and creamy. Add the milk and the vanilla. Add the mashed bananas and mix for 1-2 minutes. Add sifted dry ingrediants. Mix well. Stir in nuts.
Pour batter into loaf pan. Bake in 350 degree oven for 55- 60 minutes or until cake tester inserted into center of loaf comes out dry.
Let cool on rack before removing bread from pan.
