Butter Sauce for fish

Dad likes Lucia's idea to serve a simple sauce to compliment and enhance the natural flavor of fresh fish. The filets have been dusted in lightly seasoned flour then sautéed over medium heat in a little oil and butter.

Ingredients
- 1/2 lb. butter
- 1 small red onion, chopped (1/2 cup)
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh herbs (such as dill or tarragon), chopped
- 2 tbsp. capers
- juice and zest from one lemon
- salt and pepper

Step 1
Add the butter to a saucepan, melt and continue cooking until it turns a golden brown and has a nut-like aroma.
Add the remaining ingredients and cook over medium heat for several minutes. Spoon a little over the fish or serve it alongside.
