Ingredients

  • 1 large cooked crab 1.5 kg
  • 23 T olive oil
  • 1 onion finely chopped
  • 1 large carrot f/c
  • 1 large garlic clove sliced
  • 1 lemon grass stalk roughly chopped
  • 1 T tomatoe puree
  • splash brandy
  • 200 ml white wine
  • 3 plum toms
  • sprig of basil/tarragon/parsley
  • 3-4 T crème fresh
  • coriander leaves

Step 1

Put crab shells/or shrimp into bowl

Crab Stock

Heat oil add onion: carrot: celery: garlic: lemongrass. Stir over high heat x 4-5 minstill veg is golden and beginnig to soften.

Add the crab shells: tom puree and a splash of brandy and stir well.

Fry for another 4-5 minsstirring frequently: Add the wine and boil for a few mins: until reduced by 2/3. Pour in enough water to cover about 700-800 ml and bring to a simmer .

Skim off any scum or froth from surface then add toms and herbs:

Simmer x 20 mins.

Strain stock through a fine seive into a clean pan. Discard shells and veg: Bring the stock to the boillet bubble vigorously till reduced by a third to about 500 ml: stir in a few T of crème fraiche and season well to taste.

Spoon the crabmeat into centre of warmed bowls or add it to gently simmering liquid. To warm
