This is a nice, easy loaf of bread and makes a wonderful gift.
pckg. (18¼ oz.) yellow cake mix
can (8oz.) crushed pineapple drained
C evaporated millk
tsp. tsp. ground nutmeg
C flaked coconut
For the glaze:
C confectioners' sugar
1 to 2
drops coconut extract
TBS. flaked coconut, toasted
1. Combine first five ingredients. Beat on low speed just until moistened. Beat on high for 2 min. Stir in the coconut. 2. Pour into 2 greased loaf pans. Bake at 325 for 45-50 min. 3. For glaze combine milk and sugar until smooth. Add extract. Drizzle over loaves; sprinkle with coconut.
