Ingredients

  • 1 mango
  • 1 head red oak leaf lettuce
  • 1 head butter lettuce
  • 1/2 red onion
  • 1/2 jicama, cut into thin strip 1/4 inch wide
  • DRESSING
  • 1 cup canola oil
  • 1/2 cup EVOO
  • 2 1/2 tbsp cider vinegar
  • 1 cup chopped flat leaf parsley
  • 1/2 cup chopped cilantro
  • 1 clove garlic, chopped
  • 1 shallot, chopped
  • 1 1/2 tsp honey
  • 1 1/2 tsp sea salt
  • 1/4 tsp fresh ground pepper
  • small pinch of ground cloves
  • 1 avocado, sliced

Preparation

Step 1

Peel and pit mango, cutting into 1/4 inch cubes. Place in a large salad bowl. Tear the lettuce leaves into bite sized pieces and add to the bowl with the onion and jicama.

Combine oils and vinegar in blender. Add the parsley, cilantro, garlic, shallot, honey, salt, pepper and cloves. Blend until smooth. Pour over salad to coat, garnish with avocado and serve.
